The best dinner rolls

So, I’ve never really loved rolls, but these are a different case. I think this is one of the yummiest easiest roll recipes ever! Usually bread recipes are pretty hard, a couple months ago I made soft pretzel bites, they were SO hard. This recipe is fairly easy!These are the best dinner rolls

Right now these rolls are stored away, out of sight in a cupboard, so I don’t eat them. I am going to have to go off dairy, wheat, and a lot of fruits and vegetables until mid-July.(I have to do the FODMAP diet to heal up my stomach)These are probably the best rolls ever!

Ingredients
  1. 1 cup milk
  2. 1/2 cup butter
  3. 1/2 cup sugar
  4. 1 tsp salt
  5. 3 eggs
  6. 1/4 cup warm water
  7. 1 Tablespoon yeast
  8. 1 Tablespoon sugar
  9. 5 cups of flour
Instructions
  1. Heat the milk up to scalding (small bubbles)
  2. In a small bowl pour milk over butter, sugar and, salt.
  3. In a large bowl whisk together the eggs.
  4. In another small bowl mix together warm water, sugar, and yeast.
  5. Add milk mixture to the eggs, mix well. Add yeast to mixture, mix well.
  6. Stir in flour. Dough will be sticky.
  7. Cover with plastic wrap and let rise till' doubled.
  8. Take half of the dough and roll into a circle.
  9. Using a pizza cutter, cut into 16 triangle shaped segements.
  10. Place on a greased cookie sheet. let rise.
  11. Bake at 350 for 10-12 mins

Yummy summer caviar

Hey guys! So, How have you guys been? Over here has been awesome! We’ve had amazing weather (accept for a few windy days) and school is getting close to ending (about 2 weeks left!) I can’t wait! I am bursting for summer!! Not to mention I started planting my garden! I just can’t wait for all the summer fun! We got a huge swimming pool last summer! I’ts so big that it could be an in ground pool but it’s and over ground pool, we are planning on building a deck that comes up to it so it looks built in. 😉 Maybe I’ll have it in one of my summer posts once we get the deck built. Ok , off that tangent, I just can’t wait to have summer barbecues and pool parties, in which this will probably be a part of. :)Yummy summer caviar!

Ingredients
  1. 2 cans of black beans
  2. 1 can of whole kernel corn
  3. 2 large tomatoes chopped
  4. 1/2 of a red onion chopped
  5. 1/4 a cup cilantro chopped (garnish)
  6. 1 large avocado diced (garnish)
  7. 1 Tablespoon red wine vinegar
  8. 3-4 Tablespoons lime juice
  9. 2 Tablespoons olive oil
  10. 1 teaspoon salt
  11. 1/2 teaspoon pepper
Instructions
  1. Put all ingredients in a bowl, accept avocados and cilantro.
  2. Cover and chill.
  3. Garnish with avocados and cilantro.
  4. Serve with tortilla chips.

Subway copycat white chocolate chip macadamia cookies

So, one of my favorite places to eat out is Subway! I LOVE their sandwiches! I always get either ham or turkey on white bread, with lettuce, olives, tomatoes, Swiss cheese, and LOTS of vinegar. And,  sometimes I get a cookie. 🙂 These are my favorite, so when I made this recipe I was delighted! Subway copycat white chocolate chip macadamia cookies

This recipe is the best! I found it on subwayathome.blogspot.com. These bake pretty good, and the batch makes about 4 dozen. BUT just warning you, these don’t do very well if you store them in the fridge over night, and then bake them. You want to bake them all at the same time.

Ingredients
  1. 1 pound of butter (4 sticks)
  2. 1 2/3 cups brown sugar
  3. 1 cup granulated (white) sugar
  4. 3 large eggs
  5. 1 tablespoon vanilla
  6. 4 1/4 cups all purpose flour
  7. 2 teaspoons baking soda
  8. 1 teaspoon salt
  9. 1 12 oz. bag white chocolate chips
  10. 1 1/4 cup macadamia nuts, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. Place flour, baking soda, and salt in a large bowl and mix.
  4. Set aside.
  5. In a large stand mixer, cream butter, and scrape down sides.
  6. Add brown sugar, beat, and scrape down sides.
  7. Add white sugar, beat until fluffy.
  8. Add eggs, one at a time, beating after each one.
  9. Add vanilla, and scrape down sides.
  10. On low speed, add flour mixture, a couple cups at a time. Mix well.
  11. Add white chocolate chips and macadamia nuts, mixing only until the chips and nuts are completely mixed in.
  12. Use a cookie scoop to scoop out and place on cookie sheets.
  13. Bake for 10-12 minutes.
  14. Transfer to cooling racks.
Notes
  1. DO NOT over mix. You want them to be thick.

The BEST (and simplest) Guacamole

Do you guys like Guacamole? I DO!!! (just not the spicy kind, it just kinda ruins it 🙂 ) I didn’t used to, until I tried this! It was way back in 5th grade and one of the teachers demonstrated this recipe, just for fun (He also did salsa!!). I kinda wanted to try it so I did, Ohhh it was so good! That night I went home and made it and my family loved it! (well not my younger sisters, they wouldn’t try it 🙂 ) This is the best guacamole in the world!!!

The thing was I couldn’t remember the amounts, only the ingredients, which was no problem (I just put stuff in until it tasted good),until now. 🙂 I needed amounts to give you so YOU can make it. I did a little experimenting until I got it right. 🙂 Guacamole is spelled weird, isn’t it? 🙂 The best guacamole!!!!

  1. 2 normal sized avocodos
  2. 1/8 teaspoon garlic salt
  3. 1/8 teaspoon salt
  4. 1/4 teaspoon lemon juice
  5. 1/8 teaspoon lime juice

  1. Place the peeled avocados in a bowl.
  2. Mash them but not too much.
  3. Add garlic salt,mix in.

Ingredients
  1. 2 cups Granulated sugar
  2. 1/4 teaspoon salt
  3. 1/2 teaspoon vanilla
  4. 1/2 cup milk
  5. 1 cup peanut butter (creamy or crunchy)
Instructions
  1. Combine the milk and sugar in a medium saucepan over medium-high heat.
  2. Stir just until the sugar is incorporated into the milk, then leave it alone.
  3. When mixture comes to a boil (as soon as you see consistent bubbles), start timer for about 2 and a half minutes, Don't stir!
  4. Remove pan from heat, add peanut butter, salt, and vanilla.
  5. Beat with a wooden spoon, just until peanut butter is mixed throughout, 1 or 2 minutes.
  6. Pour the fudge mixture into a pan, and smooth the top.
  7. Put the pan on a cooling rack. Let it cool for a couple hours.
